Onion: I prefer yellow onion for this recipe as it has a bolder flavor than sweet onions but you can certainly use sweet if you prefer.
Avocado oil: Avocado oil is extracted from the pulp of the avocado. It is delicious and nutritious and easy to use.
Salsa: Using jarred salsa in this soup allows you to choose your preferred heat level.
Bell pepper: The cooking process enhances the natural sweetness and the heat softens the peppers yet they still maintain a pleasant crunch.
Fire roasted diced tomatoes: Fired roasted diced tomatoes are charred over an open flame and add a smoky flavor to the dish. They can be purchased canned and are ready to use making it super easy and quick.
Tomato sauce: Tomato sauce can refer to many different sauces made primarily from tomatoes. Use your favorite canned or jarred sauce for this recipe or try my roasted tomato sauce.
Coconut cream: Coconut cream is ideal for dairy-free dishes, providing a creamy texture with a taste that is very mild and usually hidden by other flavors. Opting for coconut cream over coconut milk creates a thicker, creamier texture.
Coconut milk: Coconut milk is simply coconut cream that has a little more coconut water added to it.
Nutritional yeast: Different from regular yeast, nutritional yeast adds a cheesy flavor to dishes without the need for dairy, making it a popular choice in vegan or dairy-free recipes.

Instructions
In a large pot: Heat your oil.
Add beef and onion: Breaking apart beef and cooking till beef is no longer pink and onions are translucent.
Add bell pepper: Add peppers and stir to combine.
To the pot: Add tomatoes, sauce, salsa & nutritional yeast, stirring well.
Add: Salt and pepper, stir to combine.
Cover pot: Simmer on low for 30 minutes.
Add: Coconut cream and coconut milk, stirring to combine.
Add: Add your cilantro & simmer 15 minutes more on low heat.

You control the heat: The best part about this recipe is it uses jarred salsa so you get to choose your heat level. Like it mild, choose a mild salsa. Like it hot, choose a hot salsa!

Recipe Variations
Instead of ground beef: You can use ground chicken or turkey instead of beef. You can even use shredded chicken if you like.
Coconut cream/milk: Allergic or not a fan of coconut cream, swap it for the milk of your choice or even cream if you are not concerned about using dairy.
Nutritional Yeast: If you do not like nutritional yeast you can add cashew "cheese" sauce to keep it dairy free or some cheese of your choice if you are not dairy free.

- 14 ½ oz Fire-Roasted Muir Glen brand Diced Tomatoes
- 14 ½ oz Tomato Sauce
- 13 ½ oz Coconut Cream
- 13 ½ oz Coconut Milk
- ½ cup Nutritional Yeast
- ½ cup Cilantro chopped
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Instructions
- Heat oil in a large pot
- Add beef and onion, cooking till beef is no longer pink

- Add tomatoes, sauce, salsa & nutritional yeast, stirring well
