Why You'll Love This Recipe
Homemade potato salad is so versatile and can be made so many different ways. I have at least 5 different recipes each with there own special twist. This one is definitely a backyard barbecue favorite with all the fresh dill, chopped pickles, bacon bits and creamy dressing it gets gobbled up fast!
Ingredients You Will Need

Baby Potatoes: Baby Whole Potatoes are a starchy root vegetable. They are small, bite sized potatoes that have a more concentrated flavor making them ideal for salads, baked, roasted or pan fried.
Bacon: Bacon is a salt-cured pork product made from various cuts of the pig, usually the belly or less fatty parts of the back.
Dill pickles: Small cucumbers that have been preserved in vinegar flavored with dill. Try my Dilly Pickle recipe!
Onion:Yellow onions work best for this recipe as it has a bolder flavor than sweet onions but you can certainly use sweet if you prefer.
Dill weed: I prefer fresh dill for its herbaceous, herby, light and refreshing flavors. It is slightly sweet with elements of parsley, celery and anise.
Dill pickle juice: Dill pickle juice is juice taken right from your favorite pickles!
Avocado mayonnaise: This mayo is made from avocado oil, unlike many common mayos crafted with other oils and offers a unique creamy texture and a healthier fat profile.
Dairy free sour cream: This is a plant-based option with a creamy texture and tangy taste, providing a delicious substitute for traditional sour cream.
Coarse Dijon mustard: This Noble Made mustard is my preferred mustard brand. Substituting wine with Dijon mustard not only imparts a subtle tanginess but also adds a vinegary note, mimicking the characteristic influence of wine in this recipe.
Salt: Elevates the overall flavor of any dish. Always salt in moderation in accordance with your dietary preferences.
Instructions

Combine ingredients: In a large bowl add your pre-cooked potatoes, pickles, onions and bacon and mix well.
Make the dressing: In a small bowl whisk together the mayonnaise, sour cream. pickle juice, dill and Dijon mustard.

Recipe Tips and Tricks
Potatoes: Be careful not to overcook the potatoes as it can result in a mushy potato salad.
