Salsa Verde Soup
How many times have you made pork shoulder or roast and have wound up with a ton of shredded pork leftover? I know I have and that is what inspired this amazing Pork & Tomatillo Salsa Soup! Having only five ingredients and ready in no time it has so much flavor and is simply a delicious and cozy bowl full of soup that the whole family will love!
Ingredients
- 4 cups Pork Shoulder or pork roast or butt - see notes
- 4 cups Sweet Potato diced
- 14 ½ oz Fire-Roasted Muir Glen brand Diced Tomatoes
- 12 oz Tomatillo Salsa click for recipe, I like Trader Joe's Roasted Tomatillo Salsa
- 32 oz Chicken Bone Broth or chicken broth - see notes
Instructions
- Place sweet potatoes in a large pot
- Pour broth over and bring to a boil
- Lower heat and simmer on a low boil for 10 minutes
- Add pork to pot
- Add diced tomatoes to pot
- Add salsa to pot
- Simmer for 15 minutes
- Enjoy!
Notes
Pork shoulder should be pre cooked and shredded
I used Kettle & Fire Bone Broth and each box is 16.9 oz so it is a little extra broth which is fine
