Do you like dill pickle potato chips?  If you said yes you are going to love this Dill Pickle Potato Salad!  Creamy baby potatoes with crispy bacon bits, dill pickle and fresh dill all tossed in the dreamiest dill pickle dressing!  Are your tastebuds salivating yet?  This salad makes the ultimate side for your grilled burgers, steaks, chicken or hot dogs.  No backyard barbecue should be without it!  My family went nuts over it and yours will too.

Ingredients
  

  • 3 lb Baby Potatoes boiled and ¼rd
  • 8 pieces Bacon cooked crispy and crumbled
  • 8 Dill Pickles small 3" pickles, unsweetened
  • ½ cup Onion diced
  • ¼ cup Dill Weed chopped
  • ½ cup Avocado Oil Mayonnaise
  • ¼ cup Dill Pickle Juice
  • ½ cup Forager Project Dairy-Free Sour Cream Alternative
  • 1 tablespoon Coarse-Dijon Mustard Noble Made
  • 1 teaspoon Salt

Instructions
 

  • In a large bowl add your potatoes, pickles, onions and bacon and mix well.
  • in a small bowl whisk together the mayo, sour cream. pickle juice, dill and Dijon mustard.
  • Add mayo mixture to the potato mixture and toss to combine.
  • Enjoy!
