Steak and Shrimp Kabobs

Steak and Shrimp Kabobs that take only 6-8 minutes on the grill to cook then slathered in the most amazing Garlic & Herb Ghee! Yes please! Lets just say you will need to double this one as David and I ate it all. The shrimp are so tender and sweet and the steak comes out a perfect medium rare. If you like it more well done you can cook the steak on skewers separately from the shrimp and leave them on a bit longer. This is the perfect dish to enjoy all summer long!

Ingredients
  

  • 1 lb Raw Shrimp tails off & deveined
  • 1 lb Beef Sirloin Steak Tips cut in cubes
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • Garlic & Herb Ghee:
  • ½ cup Ghee
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 3 cloves Garlic minced fine
  • 1 tablespoon Lemon Juice
  • 4 - 6 Basil, fresh leaves, chopped
  • 2 tablespoon Flat Leaf Parsley chopped
  • 1 tablespoon Oregano, fresh chopped

Instructions
 

  • Melt ghee in small pan
  • Add garlic & stir one minute & remove from heat
  • Add remaining Garlic & Herb Ghee ingredients, stir well & set aside
  • In another bowl add shrimp, steak, olive oil, salt & pepper, mixing well
  • Skewer shrimp & steak, if using wood skewers soak in water for 30 minutes first
  • Cook on preheated grill, turning every 2 minutes for a total of 6-8 minutes depending on how you like your steak.
  • 6 minutes will be medium rare
  • Remove to plate and brush generously with sauce
  • Save extra sauce for dipping
  • Enjoy!
