Teriyaki Pork Stir Fry (with Pineapple)

Tender bites of pork loin combined with sweet pineapple and crisp peppers in a tangy teriyaki sauce making this the most delicious bowl full! It comes together all in one pan and is guaranteed to make everyone at the table happy! It is hearty on its own but you could also make a simple fried rice or cauliflower rice to have with it.

1 lb Pork Loin cut into bite sized pieces 2 tablespoon Coconut Oil 1 medium Pineapple peeled, cored and cut into bite sized chunks 3 Bell Peppers I used red, orange and yellow. Seeded and cut in chunky pieces 1 medium Red Onion chopped 3 Green Onions sliced 1 tablespoon Sesame Seeds 1 teaspoon Salt ½ teaspoon Pepper Sauce: ½ cup Coconut Aminos 3 cloves Garlic minced 1 tablespoon Ginger minced 1 tablespoon Arrowroot flour 2 tablespoon Date Syrup 2 tablespoon Apple Cider Vinegar

Pat the pork loin dry with paper towels and cut into bite sized pieces
Prepare the vegetables and pineapple
Heat coconut oil in a large frying pan
Add pork and cook till browning, about 6-7minutes
Meanwhile, combine sauce ingredients in a bowl and whisk well
Add peppers, onions and pineapple to the pan cooking about 3-5 minutes or until peppers begin to soften
Pour sauce into the pan, add salt and pepper and stir well to combine
Allow sauce to thicken a few minutes
Remove from heat and stir in green onions and sesame seeds
Enjoy!
